Due to some recent wifi issues, I haven't been able to post anything...but with any luck all the trouble is FINALLY over. Then again, I have been so busy this week, I probably wouldn't have gotten around to any updates anyway. I got a sudden upsurge in my hours at work this week [Yay!] and on the rare morning or afternoon off I have been in the kitchen testing out new recipes for my strict diet regimen. After all, I could never content myself with eating the same thing day after day, meal after meal. Not only would it drive me crazy but I would probably get fat from the lack of balance and nutrition. Those days are over, I will have none of it. Hence the recipe testing.
The first thing I made was a baked orzo with eggplant and mozzarella. Being the lacto that I am, I left out the cheese and it tasted great. This is the first successful eggplant recipe to ever be tested in my kitchen and on a scale of 1-10... it would probably get an 8.
Next I made leek, chard, and corn flatbread. I give this a 9.6. Thank goodness I can handle goat cheese because it really made the whole dish. Since there is no sauce base, I can only imagine how dry and lame it would have been had I nixed the goat cheese. It's interesting to me how my stomach sensitivity works... maybe it is triggered only by cow products? Who knows, but my life does not depend on the knowledge of how my stomach handles things so we shall move on...
The final recipe [other than a few interesting salads and breads] was spaghetti with broccoli cream pesto. You're probably thinking "Wait a second. Cream?!"
Relax... It was only 4 tablespoons. I was SO hopeful for this recipe because I love broccoli but it was a dud. It ended up tasting like mashed broccoli with noodles. So boring. I believe I can save it by making some kind of garlic sauce to mix in and add to the broccoli and barely-there-cream business. We will see.
Who would have thought it would be so dang difficult to find decent meals for people who cannot eat meat, dairy, and certain fruits/vegetables/grains? After all, blood type A is fairly common right? I'll keep searching and let you know what I find. Try not to hold your breath, however, based on my recent track record it could be a while.
